1 1/4 cups of gluten-free self raising flour.
1 cup of coconut sugar.
1/3 cup unsweetened cacao powder.
1 tsp baking soda
1/2 tsp salt
1 cup warm water
1tsp vanilla extract
1/3 cup coconut oil
1tsp apple cider vinegar
Mix well and bake for approx 25mins, for a springy sponge.
Make the chocolate glaze.
1/2 cup coconut oil
1 cup coconut sugar
1/4 cup water
1tsp vanilla extract
1/4 cup cacao powder
Heat in a pan until gently bubbling.
To create Wanda’s gravity defying cake.
Layer the cake adding fruit and glaze in between each layer.
Top with extra glaze and decorate with fruit if you choice chocolate chunks and crushed chocolate.
