Delicious banana and chocolate chip gluten free and vegan muffins. Perfect yummy snacks for picnics and packed lunches!

Firstly brown bananas make better muffins! 😉
Ingredients;
6 bananas
1cup maple syrup
1tsp vanilla extract
1cup oil ( I used rice bran oil )
1tsp cider vinegar
1cup apple juice
1cup oat flour
1/2 cup ground almonds
1.5 cups self raising gluten free flour
1/3 cup chia seeds
1tsp bicarbonate of soda
1 cup chocolate chips
Method
First mash bananas and mix with the other wet ingredients
Then fold in the dry ingredients
Divide batter into 24 muffin cases
Top with a sprinkle of chocolate granola (optional ) .
Bake @ 180 for around 20 minutes or until knife comes out clean.
