Chocolate chip orange cake.

Ingredients

4 large juicy oranges 🍊 
1 cup of ground almonds 
1 cup gluten free Self raising flour 
1cup soft brown sugar 
1tsp good quality vanilla 
1/2 can whipped aqua fabba 
1/2 tsp bicarbonate of soda 
1/2 tsp of good salt 
1tsp cider vinegar 
1/2 cup dark chocolate chips 

Method

Slice raw oranges into quarters keeping the peel on and blend in food processor until smooth. Sieve into a mixing bowl. 
Add almonds, sugar, flour, bicarb, vanilla and cider vinegar. Mix well . 
Fold in whipped aqua faba.
Aqua faba is the liquid you drain from a can of chickpeas
(whipped like egg whites)! 
Pour mixture into prepared tin (6” tin, lined with parchment) and  sprinkle with chocolate chips . 
Bake at 180 for ten minutes then turn oven down to 140 and bake for another 20 minutes or until the top beings to crack and a skewer comes out clean.
