Wild garlic fermented salsa. By Wanda!

Ingredients
- Big bunch of wild garlic
- Big bunch of fresh coriander
- 1 cucumber
- Juice of 4 limes
- 2 tsp salt to taste (salt is important to lacto-fermentation process)
- Bunch of green onions
- Green chilis to taste
Method
- Finely chop and mix all ingredient.
- Roughly blend with stick blender to desired consistency.
- Put the mixture into a kilner jar with a flip top lid or a fermenting crock.
- Leave to ferment on the counter top for four days .
- Then put in fridge . Keeps for a couple of weeks!
