Sugar Free Beetroot Brownies

Ingredients:
50g ground almonds
50g plain flour (Wheat or gluten free)
1 tsp baking powder
One medium sweet potato
4 tbl cacao
3 tbl beet powder
3 tbl coconut oil
1 egg
4 tbl honey, agave or maple syrup
1/3 cup orange juice
15 dates

Preheat oven to gas mark 4. Roast the sweet potato in its skin. When cooked and cool enough to handle get all the pulp out of the skin and put in a bowl. Add all the other ingredients to the bowl and whizz together with a hand blender or a whisk. The mixture will be quite wet. Pour it into a greased baking tray and bake for 15-20 minutes.

You can easily adapt the recipe to make it vegan. Just omit the egg and add  1/2 tbl of vinegar and 1/2 tsp of baking soda.
